I'm trying to find a new knife sharpener for my Misen blade. It requires a 15 degree cut (a/k/a "japanese") rather than the usual 20 degree sharpening.
Anyone here know a sharpener who can do that and is either local enough for me to drive there, or won't take me for a ride if I have to ship it to them?

Wish i could help you, I have a very nice Shun 8" Kiritsuke knife (Demascus steel) with a 16 degree edge and i cannot get it nearly as sharp as it was new. It is a couple years old so it's to be expected... so if you find a good sharpener let me know! I have a 2 sided stone from Amazon and just can't get it right.
