I finished off my other two pizzer doughs

Did a mozzarella stick and pepperoncini on Sunday night.

I picked up an Angus boneless prime rib roast at Walmart the other day. it was $12 a pound so i couldn't resist grabbing a small one, at 4.8lb

I salted it last night and took it out earlier for additional seasoning, pepper, garlic, and thyme, nothing fancy. I was dead set on getting some smoke flavor so i threw it on the kettle outside with lump charcoal and a couple big chunks of mesquite. It's cold as fuck out, 15 degrees so i only went 1 hour, the cold definitely would've extended the cook time. But i got what I wanted, a quick intense smoke, and I can finish it off in the oven for another couple hours. Here it is goin into the oven, that fucking color holy shit. Cant wait to eat this later, will post an update, finished pics.
