Happy Cinco de mayo friends!

I made some scratch carnitas (except the tortillas) today. My plan was to smoke the pork for a while before finishing it off on the stove top. But it’s been pouring all day so I chunked them and seared in the iron skillet then braised. I return some of the fatty bits back to the skillet at the end just to get them crispy. Topped off with homemade salsa, cilantro, diced onion and thin sliced radish. They were delicious!
